Over the last month I've paid off all collections accounts but my score has not changed.

Depending upon the age of the collection, it is possible that the majority of the damage had already been done, thus the repayment would not increase the score itself.  Your mortgage broker will want to see these paid off, thus, you are already one step ahead of what they will want.  On time and proper credit management will help start the steady increase of your credit score.   You can seek out a mortgage firm for pre-approval and they can let you know what other suggestions they can offer to get you within approval range.
