The Credit Karma system establishes utilization based on "last statement balance".

Paying off the balance so that it "posts the day before closing" potentially could increase your score.

If you have a Sears charge or Discover card you can actually overpay your balance ahead of the closing date at your local Sears store checkout counter.  They might even except a balance transfer check from a competitors card offer (though I never tried that myself).
