If I pay off the eviction amount that is on my credit report, will the eviction come off?

The public record which includes the eviction and unpaid rents will not go away when you pay off the debt.  It can be reported as paid which helps your credit, although the actual item will remain on your report for the full 7 years.

Not unless you negotiated in advance with the one reporting the eviction. Sometimes, you can negotiate a "pay for delete" but this is sometimes difficult to do. In general, if you just pay it, it will not be removed until 7 years has passed since it was reported. However, if you are trying to rent another place, paying it off looks better than not paying it at all.
