How do write off hospital debts that haven't been paid?

YOU don't.

It is up to you to try making sure the debts get paid.  If they are supposed to be covered by insurance and weren't, make sure the hospital resubmits them.  If you can't possibly pay them, contact the hospital business office to see if there is assistance with the bills because some hospitals have funds available to cover those debts for honest, needy ones. And there is the wait for the debts to be considered uncollectable, which differs by state, and the debts will drop off after 7 years if no payment activity takes place in the meantime.
