My average of open credit lines are 5 yrs, 7 mo. But I just paid off my youngest loan (1.5 yrs). So my average of of open credit should go up and with it my credit score. Yes? Well how long does that take? My score 792 and I want to break 800 before I'm in the market to buy a house.

I am a loan officer and there's no reason to break 800 when trying to buy a home. Your score of 792 is excellent and you would get the best rates as long as you qualify in other areas of the loan; job history, reserves (money in your bank accounts), etc.

It is possible your score may go down after paying off the one loan, even though your average age of open credit lines goes up. If you do not have a good mix of installment vs revolving open lines of credit, one less installment loan could have it go down. The number of open accounts will decrease, as well. You also have one less account with active payment history going forward.
You have a 792 and likely already qualify for the best rates out there now. Why are you waiting? More can happen to bring your score down than bring it up, so why chance it and start looking for the home you want now.
